Step One
Prep the mix
80g potato starch ( ~ 1/2 Cup )
80g superfine white rice flour ( ~ 1/2 Cup )
80g white rice flour ( ~ 1/2 Cup )
30g tapioca starch ( ~ 1/4 Cup )
16g whey protein concentrate ( ~ 2 Tbsp )
4g psyllium husk powder ( ~ 1 tsp )
3g xanthan gum ( ~ 1 tsp )
14g double acting baking powder ( ~ 1 Tbsp )
2.5g baking soda ( 1/2 tsp )
6g salt ( 2 tsp kosher salt, 1 tsp table salt )
4g sugar ( 1 tsp )
Whisk to combine all ingredients in a bowl. You want to make sure all ingredients are evenly distributed, take your time to do a thorough job. Especially with big batches!
Step Two
Store your mix
Store the mix in an air tight container, in a cool place. Use within ~6-12 months.
When using prepared mix, it’s never a bad idea to give your container a shake or a whisking to make sure ingredients are still well distributed.
